
New Gluten-Free, Plant Based Restaurant Opening in Grand Rapids This Spring
The owners of a Grand Rapids' gluten-free, plant-based bakery are branching out with a new eatery.
Becca and Nick Van Liere started Rise Authentic Baking Co. in small apartment back in 2015, selling allergen-friendly baked goods at different locations around Grand Rapids.

In 2019, they joined forces with Squibb Coffee and opened a storefront at 1220 Fulton St. West.
All the breads, bagels, doughnuts and more that they serve are vegan, gluten-free, soy-free, dye-free, and free from artificial flavors and sweeteners.
Now they're expanding with a new restaurant called Fika, located in Grand Rapids' Creston neighborhood at 1359 Plainfield Ave. Fika is a Swedish word and it means to take a break with your friends and family and a enjoy a meal, coffee, and a treat.

The new restaurant will also be gluten-free and plant-based. There will be some soy products, like tofu and tempeh, but there will be soy-free options as well.
On the menu you'll find sweet and savory breakfast options, salads, sandwiches, and smoothies. They'll also serve baked goods from Rise Authentic Baking Co. and Squibb Coffee. Plus there will be a market area selling local good s and snacks.
Renovations have been underway at the new restaurants' location, which is on the ground level of the Lofts on Grove apartment building.
The plan is to open Fika this spring.
