Montejo's Cookhouse Opening Permanent Location in Grand Rapids Area

The owners, Jazmin Montejo and her husband, built their business around authentic Cuban pizza. These personal-sized pies feature a slightly sweet tomato sauce and a crust baked with a ring of crispy cheese around the edge.

According to Wood TV 8, the owners are aiming for an official grand opening on October 10, complete with live Cuban music to celebrate the milestone.

Expanded Menu at New Restaurant

Having a permanent location allows the menu to grow beyond what the food truck could hold. The expanded kitchen will offer new pizza toppings like al pastor, plus traditional Cuban dishes like ropa vieja (shredded beef with rice, beans, and tostones), and batidos (shakes) in flavors like guava and mango.

Montejo tells Wood TV 8 the new restaurant is a dream come true and that the move indoors was partially driven by weather. Rough Michigan winters are tough for food trucks and they ended up being closed for a good portion of snowy season last year. This way, people can enjoy their authentic Cuban food year-round!

Fans of the original setup can still look forward to seeing the school bus around, as the family plans to keep the food truck operational too.
